I got ChucK going and have the processing sketch running, drawing and scanning. but nothing come out of ChucK. It occurs to me that the IP is not settable is this what I need?

Thanks, I found a typo in the code for the Processing sketch. If you try again now, do you have better luck? If not, go for changing the port numbers in the code .. maybe there's a conflict. The "localhost" seems pretty reasonable for me, but you might change that to an IP if you still have no luck.
